Because their muscles are beginning to relax & they aren't quite asleep, so they twitch. Freaky; isn't it? I sometimes twitch & wake myself up!
They're dreaming that rats are biting them. Either that, or rats actually are biting them.
It's in their mind, Really! What happens is they are dreaming, and even if they can't remember it things are happening in those dreams that they are having reactions to.
There are 2 different stages of sleep your deep sleep, and your R.E.M. sleep (rapid, eye, movement). It is during your rem sleep that you dream, and where you twitch, it is completely natural and is an involuntary muscle spasm
