How can someone be Allergic to Wheat Bread?
Answer:I personally have Celiac disease. Celiac disease is an auto-immune disease where, when you eat gluten, a sticky protein found in wheat, oats, rye & barley, your immune system attacks the villi in your small intestine (Villi, the small hair like things that absorb nutrients from your food) producing a variety of symptoms from nothing, to extreme pain, gas, diarrhea, flu like symptoms... Over time, the villi in the small intestine become damaged and flat and don't absorb nutrients anymore. Then you can get all the symptoms associated with nutrient deficiencies which are varied and many. If I were to continue to eat foods containing gluten, I could get intestinal cancer from the stress caused to my digestive tract. I am on a gluten free diet. There are glutens hidden in all sorts of things. "natural flavors" "spice extracts" "MSG" "caramel coloring" "red 40" I have to be very careful, which means that I know what's in my food & I tend to eat healthier. Not such a bad thing. I do miss real pizza though.
You've probably seen gluten free on something at the supermarket or at least at the health food store by now. They have wheat free pastas in most supermarkets now.

Celiac disease is not necessarily the same thing as gluten intolerance, and there are people out there who are only allergic to wheat and not specifically gluten.
