My girlfriend has had some serious medical problems that no doctors (not even Mayo clinic) can figure out. Fevers reaching 104 are regular. Had her Gall bladder removed, but it did not help. She suffers from Sarcoidosis, Celiac Disease, Diabetes (type 1) and colitis. As well has had major headaches the past 2 months that won't go away.

He blood work comes back as good, and she has been on IV Anti-biotics for 1 month now. After 9 days in the ICU and 2 in the hospital's standard rooms, they sent her home and she continues the IV's at home.

Any one heard of this? Any suggestions?

I am not looking for a doctor to come and save the day, just more less if anyone has suggestions or has had the same issues or heard of it.

With all of the above issues you mentioned, I would classify her as having whats called as "fever of unknown origin." I also would say that she is pretty immunocompromised, meaning that her immune system isn't healthy compared to yours and mine. She is susceptible to develop infections with organisms that most of us do not develop due to our healthy immune systems. Has she been tested for tuberculosis? HIV test?

Things that may cause FUO are certain collagen-vascular diseases, extrapulmonary tuberculosis, solid tumors, abdominal abscesses, infective endocarditis, amebic liver abscesses, etc. If she's traveled a bunch or from a developing country she may also have been exposed to malaria, brucellosis, kala azar, filariasis, schistosomiasis, Lassa fever, etc.
