Believe it or not one of the healthiest is McDonalds Asian Salad which was actually developed with the help of heart and health expert Dr. Ornish. I read an article by him in the latest Reader's Digest in which he said that.
Cooked at home or eaten out a veggie stir fry is good. If you are cooking use Pam or other non stick coating and just a touch of olive oil or peanut or sesame oil and cook the vegies quickly to tender crisp. I like to do a combo of soy sauce, garlic, ginger, and a little black pepper to toss with the veggies as they cook to give flavor. Some ppl like to add some chicken bullion powder for a more meaty taste. I use celery, bean pods (if I can get them) onion, broccolli, green and red peppers (yellow too if available), and whatever other veggies are handy. I have seen tomatoes used and also potatoes but somehow to me that is not very oriental or very good. Serve over lightly cooked rice (not hard but not sticky gooey either minuit rice is OK too so is brown rice.) Finish as oriental resteraunts do with orange wedges.
Another possibility is an oriental salad you make using mixed greens, orange sections, alfalfa and or bean sprouts,onion if you like onion and a bit of chicken and/or shrimp/ Add a few tiny slices of ginger to flavor and maybe some water chestnut slices if you can find them. Use a low cal oriental dressing or skip the dressing all together and let the juice from the orange be enough.
