I think Dr. Sam is close, but nonetheless incorrect.

Posterior to the oral cavity is the pharynx. Just in front of the pharynx are the palatopharyngeus muscles, and in front of that, are the palatoglossus muscles.

The uvula, which is nothing more than a muscle extension of posterior edge of the soft palate, is just anterior to the palatoglossus muscle. This muscle extends from the posterior border of the soft palate to the posterior-most part of the tongue.

Hence, I'd say that the superior aspect of the palatoglossus muscle is the posterior-superior border of the oral cavity.

The oral cavity proper, however, if memory serves, is limited to the space between the dental arches.

In all honesty though, this is all just semantics, and has nothing to do with anatomy.
